Key to grilling a great steak: 1. Dry off the meat before grilling - excess moisture will steam and it prevents caramelization. 2. Keep one side of your grill hot, the other warm. Use the hot side to carmelize your meat then move it to the warm side to finish cooking the steak to its desired temperature. 3. Baste with a mixture of beef jus and butter or olive oil to maintain moisture.  
4. Let meat rest before serving.

Favorite kitchen utensil: A big tablespoon. I can pretty much do anything with a spoon - peel, stir, plate, taste, and flip.

How are you celebrating the holidays: Relaxing with my fiancĂ©e and the puppies at the house, cooking a nice dinner, and having a few bottles of wine.

Gift you want most from Santa: I have a whole list of parts that I need for the car I'm restoring, it's a big project!

Most cherished holiday memory: Having Christmas with my entire family as a kid. Loved heading over to grandma and grandpa's house for dinner and more gifts!
