What inspired the restaurant's name, Frankie's Scaloppine?
It's a combination of my middle name and our love for scaloppini dishes. 

Now that you're happily settled and the pressure is off, what dish are you dying to make your new in-laws? 
Introducing them to my family's traditional Piedmontese cooking. I haven't slipped them any dandelion or chicory root yet, but they have had my polenta.

You're like the Tony Hawk of Chicago's culinary community. How did your love for skateboarding and extreme sports begin? 
Like many of us, my passion began as a kid. I have been skateboarding over 35 years and snow- boarding for 30 years. For me, there is nothing like standing on a  mountain top with your best friends and family, looking down the run with its fields of powder, waiting for you to 
slay it.

What's your favorite food mash-up? 
On Sunday mornings I like to go to Rubi’s at the old Maxwell Street Market. They have a wicked steak, grilled onion and Swiss quesadilla. It’s the best!

What's the secret to your success? 
My dad’s motto was "hard work mixed with love". It's our family tradition.
